Here’s a tasty, frugal, and easy apple pie recipe to try for the holidays (or today). Apple pies are most frugal when apples are in season and when not using the oven to bake them! So I’m trilled to share this no-bake or raw applicious recipe with you.

The flavor of your raw apple pie filling depends on the apples you use. I like spartan, pink lady, and mackintosh apples. Since there’s no flour in this recipe, this pie is suitable for those on a gluten free diet. Personally, this is the best apple pie recipe I’ve ever eaten. But then again, I’m a frugalicious health nut. πŸ˜‰

This recipe is adapted from a seriously delicious book: Ani’s Raw Food Kitchen: Easy, Delectable Living Foods Recipes (Amazon $13.57)

Ingredients

Almond Pie Crust:

  • 1.5 cups almonds
  • 1 tsp sea salt
  • 1.5 cups pitted dates

Syrup:

  • 1/2 cup pitted dates
  • 1 orange, peeled and seeded
  • splash of water (as needed)

Apple Pie Filling:

  • 5 cups apples, peeled, and thinly sliced (about 5 or 6 apples). I always add extra.
  • 1 cup raisins (not pictured)
  • 2 tbsps ground cinnamon
  • dash of nutmeg (optional)

Preparation

To put this simple pie together you’ll need a food processor and a blender. No need to turn the oven on.

Crust:

Here’s how to make this nutty crust.

  1. In a food processor, pulse almonds and salt until nuts are in small pieces. Do not overprocess as you want the crust to have almond chunks.
  2. Slowly add small batches of dates into processor to mix with almonds. The dates will bind the almonds to form a dough.
  3. Press almond and date dough into a pie pan. Set aside.

Syrup:

The flavors in this syrup are amazing.

  1. In a blender, place orange first. Add dates and blend. Add water to help syrup mix well (if needed).
  2. Add syrup to apples. Set aside. The longer you let the apples stand in the syrup, the longer the apples will “cook”.

Apple Pie Filling:

  1. Place sliced apples in syrup in a large bowl with raisins.
  2. Toss with the cinnamon and a dash of nutmeg.
  3. Spoon apple pie filling into pie crust. So easy, tasty, and good. Enjoy!

This raw, no bake, and gluten free apple pie will keep in your fridge for two days. When I make this recipe, it doesn’t last a day. Snicker. I’m not sure why but I never miss the “cooked” flavor or the pastry crust. It’s just sooo yummy!
