		<description>Turkey (or chicken) Enchiladas.  I&#039;m a big fan of using leftovers in a way that in no way resembles the original meal.  Anytime we back chicken we always do way more than needed for that night just so that we have the extra precooked meat for enchiladas the next night. There are a miillion recipes online but most call for 1-2 cups of chopped up turkey/chicken pieces so it&#039;s a great way to use up the little bits of turkey leftovers. If you don&#039;t want the enchiladas right away, then measure the amounts of meat you&#039;ll need into freezer bags for later. Last Christmas we went to far as to cook an extra turkey the day after christmas (no stuffing to keep it simple) and bagged and froze ALL of the meat for future meals. We finished the last of it around Easter.</description>
