Recipe: Tomato Basil Soup

It’s time to get warm with something cold. This simple tomato and basil soup recipe will truly warm your senses. It’s easy to make, healthy for your body, and delicious to eat. I’ve never been a fan of cold or chilled soups, but this tomato soup recipe is seriously to die for. Plus it’s vegan and raw if you’re into that sort of food.

The soup base is warming with garlic and basil. Finding the best possible tomatoes is key. So grab your blender or food processor and let’s get chill by eating some raw food goodness. Besides, adding more raw food to your diet is really good for you.

Ingredients:

This recipe serves about four.

Soup Base

  • 3 tomatoes
  • 2 cloves garlic
  • 1 teaspoon sea salt
  • 1/2 cup virgin olive oil (use more for a creamy texture)
  • 2 cups water

Soup Topping

  • 1 tomato, diced
  • 1/2 cup fresh basic, chopped
  • 1 cup zucchini, chopped (optional)
  • add other raw veggies for some crunch (optional)

Instructions:

In a blender: blend 3 tomatoes, garlic, olive oil, salt, and water until smooth. Pour soup into four bowls. Top each with tomato, basil, and optionally some raw veggies (if you want some crunch).

I must admit, I’m very surprised with the flavorful tastefulness this raw soup recipe offers. My “better half” and I thoroughly enjoyed the blended flavors and the creamy texture of this soup. Yum. Got any soup blending tips to share?

    Is there anything that goes better with tomatoes than basil? I really don’t think so. I am kinda surprised about the amount of olive oil though; doesn’t it separate?

    @Erik I kept this soup in the fridge for 2 days without it separating. If blended well, I don’t think there should be any problem. There is nothing better than tomatoes and basil. Especially if the tomatoes and basil are fresh from your garden. 😉
