I'll add a little Deep South (Mississippi) to the mix......not exactly healthy recipes, but quite a treat!

FRIED TOMATOES

Green Tomatoes: Cut tomatoes into 1/2 inch slices. Dip in flour seasoned with salt and pepper. Fry slowly in a small amount of hot fat until browned on both sides.

Ripe Tomatoes: Cut into 1/2 inch slices, dip in mixture of beaten egg and water, then into bread crumbs. Fry quickly in hot fat until brown on both sides. Season with salt and pepper.

Of course, the ultimate tomato recipe simply requires a ripe red tomato, sliced, placed between two pieces of 'store bought' white bread that have been liberally coated with Blue Plate Mayonnaise, a generous sprinkling of salt and pepper.......

Not healthy, probably not even PC.......but oh, the memories!
