EXACTLY what I needed. I am not an imaginative eater. I need ideas like these. These satisfy my need for interesting food and healthy to boot!

Great ideas.

It is hard to predict how much my kids will eat at any one meal, so I also dump whatever is left on their plates into a tupperware for lunch the next day. Since we use the same plates for dinner and dessert I sometimes get a missed bit of fruit or a bit of pie :)

I've used PB&J both to save money and to do a quick meal when we didn't plan ahead.

However, 99.9% of the time, I do #2 and bring last night's food. That way I get the awesome complication (taste-wise and ingredients-wise) of a dinner (face it - dinner is usually more complicated than lunch because you have more time to make dinner) for lunch! I love it! I usually makes me look forward to lunch.
